Ahimi® is made from tomatoes, but the texture and flavor of the tomato are transformed through a special technique. Ahimi® was designed to be a delicious alternative to ahi tuna with a savory, meaty taste. It’s made from tomato, but its appearance and texture are indistinguishable from raw tuna.

I tried a few pieces of the final product, and it’s convincing. The texture and look are spot-on, and a friend could not tell the difference between [Ahimi™] and raw fish.

Tomatoes contain high levels of naturally-occurring glutamic acids, which are responsible for the savory flavor of meaty foods. Certified Master Chef James Corwell's proprietary method combines tomatoes with simple, natural ingredients to enhance the natural savory quality of the tomato, making Ahimi a natural seafood experience.

I had a chance to try Corwell’s [Ahimi] delivered fresh from his kitchen. As a seafood lover, I was skeptical. But it was tasty—thick and fatty, just like real tuna, with a savory taste... I would mistake it for tuna in a line-up.
