WHAT’S IN UNAMI?

We keep it simple. Unami is made from eggplant, gluten-free soy sauce, mirin, sugar, rice bran oil, algae oil, and konjac powder.

WHY EEL?

Freshwater eel is being fished to the point of collapse. Rapidly declining eel populations have led to eel being rated ‘Avoid’ by the Monterey Bay Aquarium’s Seafood Watch program.

“Eel stocks are a fraction of what they were in the 1960s, and conservationists say continued overconsumption could condemn the animal to the same fate as the Pacific bluefin tuna. The environment ministry designated the Japanese eel as an endangered species in 2013.”
